Amarone means, strongly bitter in Italian. It is an Italian wine made in the Veneto region using the
Passito method. This method involves drying the grapes before fermenting them to concentrate their sugars and, therefore, their flavor. Fermentation continues until the wine is completely dry to produce
amarone, meaning that all of the sugars have been converted to alcohol. Ubriaco starts out as a 5-month aged Monte Veronese, which is then washed in
amarone, giving it the heady, alcoholic overtones of this spirit. It is a rustic cows milk cheese that has been aged to develop a distinct sharpness and a pleasing tang. This cheese is typically eaten as a table cheese, served with the edible rind.
